Harriet’s special homemade chicken noodle soup recipe! If you’re sick, the best thing to eat (when you’re allowed to) is chicken noodle soup 😤 everyone knows it’s the best comfort food for a sick person! My special recipe changes every time I make it based on what I have i the fridge (when we’re ill or looking after someone it’s hard to find time to go to the grocery store to pick up new ingredients) - but the basic ingredients are the same. Ingredients: Chicken - I like thigh meat Half an onion Minced garlic Chicken bullion stock (I use an Asian brand rather than western ones) 5 spice Lemon juice Tomato Packet of instant noodles (just the noodles not the packet it comes with, but if you don’t have chicken stock then you can’t use the packet) Veggies (today I had baby spinach in my fridge) Herbs (I throw these in randomly, today I had basil and coriander) Recipe: 1) cut the onion into slices, put in soup pan with some oil and slowly cook at low-medium heat. We want to caramelise the onions to add a sweetness to the soup! Caramelising onions take a while, slow and steady, on low heat, stirring occasionally. 2) while the onions are cooking, I cut up my chicken into bite size pieces, and mince my garlic. Once the onions look nice and wilted/brown and smell sweet I add the chicken and garlic and turn the heat up to medium. 3) cook the chicken until it’s browned on the outside, add the 5 spice and continue cooking until it smells good. I mostly judge cooking by sight and sound and smell at this point so it’s hard to pinpoint how long this all takes 😅 4) add water to the pan (as much as you’ll be needing) 5) add the chicken bullion stock, this comes in powder form for me so I mix it in. Then I bring the water to a simmer on medium high heat 6) dice the tomatoes and add them. I always add tomatoes because it brings acidity to the broth which is always needed in my opinion. 7) I then add my baby spinach. This comes close to last because it cooks quickly, but if I had other veggies in my fridge like carrot that takes longer to cook I would have added it in earlier. 8) add a dash of lemon juice 9) at this point I taste the broth. Is it too sour? Add a bit of sugar. Is it too salty? Add some water. Is it too bland? Add some fish sauce or more chicken bullion stock. 10) once I’m happy with how the broth tastes I finally add the instant noodles, and then when they begin to get a bit soft I take it out and serve! I like my broth light and balance, since I can’t handle super strong flavours when sick. Make sure you adjust the seasoning to your tastes :-) this recipe is very easily adjusted and changed!
